Since 2007 Hansjörg Weis has been distilling fine distillates in his small private distillery. Under the strictest quality requirements, rare brandies are produced which win renowned prizes abroad.

In the past, distilling schnapps was a hobby of many South Tyroleans. Especially the Unterlandler (editor’s note: those South Tyroleans who live in the Etsch Valley south of the provincial capital, e.g. in Tramin) have always been known for their idiosyncratic distilling culture. In those days there was a lot of experimentation, but today most distillers are concerned with conjuring up great quality in small glasses. One distiller who has made a name for himself in the high-proof industry in recent years is Hansjörg Weis from Tramin. Together with his family he distils with feeling and strong volume: fine distillates of quince, plum, rowanberry and Williams pear. Decisive for these literally excellent distillates is not only the best fruit, but also experience and talent in distilling. The crux of the matter: a lot of fruit and a lot of work don’t bring much schnapps. Thus, 0.35 litres contain a whole 8 kilograms of fruit. Crazy, isn’t it? And so it happens that the Plonhof private distillery produces only 1,500 bottles a year, which understandably sell out quickly. So it pays off to ask for them at Bar 62. And anyone interested in a tour of the small distillery is always welcome. A short registration is sufficient.

At DominicUs in Kaltern, you will plunge steeply into underground cellar worlds. Dominic has many hobbies, one of which is particularly distinctive: “digging”. And so he built a labyrinth cellar. Far below ground. Bizarre and insanely adventurous: a cellar tour with wine tasting through the Dominikus Cellar.

There are many things that can be wonderfully described. A guided tour through the Dominikuskeller is not. One must have experienced it. The cellar was built by hand by Dominikus and is today considered an absolute must-see for curious South Tyrolean explorers. In addition, the Dominikus Winery – sunny situated above the well-known Lake Caldaro – produces wines of strong character, the enjoyment of which makes a guided tour of the cellar even more exciting. The Dominikus Cellar is also a popular address for cyclists. One wonders whether they will all emerge from the underground labyrinth. But that remains a secret.

Goethe once said “Life is too short to drink bad wine”. And that’s exactly why you should visit the Pfitschers in Montan. Here you risk nothing: a cellar full of good wines. We are convinced that Goethe would have liked it.

You are on the main road from Montan and then follow the sign “Weingut Pfitscher”. It goes off to the left, steeply downhill. Here you will have two questions: Are we in the right place? And: What can we expect? But soon you will see the winery right in front of you. A really beautiful, modern building, you will think. Not an everyday winery. Modern and inviting.

Once you enter the winery, you will be surprised once again: WOW! What a view! The tasting room has a huge window front facing west. From here you have a really great view of the South Tyrolean lowlands and the surrounding mountains. At sunset it gets really kitschy, a dream. Inside you will notice the modern style: clear lines without any frills, and that’s just as well.

But you are not only here to admire the architecture and furnishings, you also want to taste the good wines. There are plenty of them here. The Pfitscher family will certainly be delighted to give you a tasting. The winery is a family business. Three generations work together here. The concentrated load of experience on one side and the fresh wind on the other side form a perfect symbiosis. They work here with passion and enthusiasm. But passion and enthusiasm alone is not enough to produce the tens of bottles that are produced. There is really hard work behind it. The vines of the winery are situated in very steep locations and most of the work is done by hand. This can make you sweat. The things you do for a good glass of wine. What comes out of it, unmistakable taste and top quality.

What is particularly important is honest and clean wine. The flagship wines of the winery are the Pinot Nero Riserva “Matan” and the Sauvignon “Mathias”. The winery has already received several cool awards from Falstaff, Gambero Rosso, James Suckling, … This is something to be seen and above all to be drunk! By the way, the Pfitscher’s themselves are also quite nice to look at…
